Malang, ITN.AC.ID – Tumpeng kerap dihadirkan pada suatu perayaan tertentu. Kehadiran tumpeng sudah menjadi budaya sendiri bagi masyarakat Indonesia. Hidangan khas ini juga memiliki filosofi yang luar biasa. Bentuknya yang kerucut mengarah ke atas melambangkan wujud rasa syukur kepada Tuhan Yang Maha Esa.

Untuk itu, 15 tumpeng yang indah dan cantik turut memeriahkan Dies Natalis ke-55 Institut Teknologi Nasional Malang (ITN Malang). Lomba tumpeng yang diikuti prodi dan beberapa biro ini menampilkan aneka ragam bentuk dan rasa yang mempresentasikan masing-masing prodi.

Rektor ITN Malang, Awan Uji Krismanto ST, MT, Ph.D., menyatakan, lomba tumpeng bertujuan untuk dapat saling mengakrabkan, memperkuat, dan menyatukan rasa kebersamaan antar sivitas akademika.

“Tahun ini kami rayakan dies natalis dengan sesuatu yang baru melalui festival tumpeng antar program studi. Tujuannya untuk lebih mengakrabkan dan lebih ada kebersamaan antar prodi,” tuturnya, di Aula Kampus 1 ITN Malang, Kamis (25/01/2024).

Sebagai pemenang lomba tumpeng adalah, juara 1 biro administrasi umum dan keuangan (BAUK), juara 2 prodi perencanaan wilayah dan kota (PWK), dan juara 3 prodi arsitektur.

Prodi PWK ITN Malang menampilkan tumpeng yang menggambarkan kebersamaan prodi-prodi di bawah naungan atap ITN Malang. Ini terlihat dengan adanya tulisan nama-nama prodi di sekitar tumpeng. Tumpeng mengambil desain bangunan atap Kampus 2 ITN Malang, dengan empat sisi pilar kerja ITN Malang yakni pimpinan, yayasan, dosen, dan mahasiswa. Patung Ganesha kecil turut disematkan di bagian atas atap sebagai perlambang semangat untuk saling menjunjung kebijaksanaan dan ilmu pengetahuan.

Untuk warna merah, biru, kuning di bagian atap adalah simbolisasi warna primer yang melambangkan merah semangat berjuang, kuning semangat kreativitas, dan biru semangat mengairi semesta dengan pengetahuan.

Menurut Antonio Heltra Pradana, S.T., M.URP, dosen PWK ITN Malang, pesan yang ingin disampaikan lewat tumpeng ini adalah harapan semakin bersinerginya ITN Malang baik secara internal dan berkolaborasi secara eksternal. Terutama untuk semakin meningkatkan pendidikan sebagai roh utama pengelolaan institusi dan pelayanannya.

“Harapannya ITN Malang menjadi institusi yang peka terhadap kebutuhan jaman, dan cepat tanggap atas berbagai peluang. Lebih berani mengambil resiko dan meningkatkan kualitas tata kelola pelayanan segala aspek terhadap mahasiswa,” jelasnya.

Sementara untuk tumpeng Prodi Arsitektur ITN Malang diberi nama Tumpeng Sambaddhata. Dimana dalam bahasa Sansekerta memiliki arti kebersamaan sebagai tujuan dari lomba tumpeng untuk meningkatkan rasa memiliki. Tumpeng berkonsep Arsitektur Nusantara (Tatanan Rumah Adat Joglo) ini mulai konsep, pembuatan (memasak), dan menata pengerjaannya melibatkan hampir semua dosen arsitektur.

Tumpeng prodi arsitektur tergolong lengkap, selain nasi kuning juga menyajikan ayam ingkung, sambal goreng kentang, kering tempe kacang, mie kuning, rolade daging, bali sate telur puyuh, udang goreng, serta buah-buahan.

Bayu Teguh Ujianto, ST., MT., dosen arsitektur menjelaskan filosofi tumpeng. Sebagai pembuka adalah pendopo (penerima dan pembuka) yang terdiri dari ayam ingkung dan buah-buahan. Ayam ingkung memiliki filosofi mengayomi yang diambil dari kata “jinangkung” dan “manekung” yang berarti memanjatkan doa dalam Bahasa Jawa Kuno. Sementara buah sebagai makanan pembuka.

Masuk ke dalam tatanan di dalam tampah ada urutan tatanan Ruang Pringgitan (Rg. Tengah) untuk menjamu berupa susunan lauk pauk pendamping tumpeng. Lanjut dibelakangnya ada Ndalem (Omah) berupa menu utama itu sendiri yaitu nasi tumpeng.

“Omah disini kami konsepkan mengacu ke rumah tradisional yang memiliki konstruksi mulai dari kaki, badan dan kepala. Makanya tumpengnya tidak kami buat seperti biasa di cetak langsung bersanding dengan lauk pauk, tapi lauk pauk itu kami ibaratkan sebagai “kaki omah”. Diatasnya sebagai “badan omah” kami letakkan wakul, dan terakhir sebagai “kepala omah” kami taruh gunungan tumpeng di paling atas,” beber Bayu.

Selanjutnya di samping kiri kanan tampeh utama diletakkan lauk pauk pendamping untuk prasmanan yang merupakan filosofi dari ruang “Senthong Kiwo dan Senthong Tengen” yang menggambarkan ruang penyimpanan di rumah adat joglo.

Terakhir di belakang memiliki filosofi sebagai “Pawon” atau ruang servis berupa dua bakul berisi nasi kuning sebagai lauk utama untuk menservis prasmanan para tamu. Dengan filosofi-filosofi tersebut harapan untuk ITN Malang kedepan diwakili ayam ingkung tadi yang menyimbolkan mengayomi.
